Kneehigh Farm is a one woman-run vegetable farm located in the Lehigh Valley. Over 100 varieties of fresh produce are grown without synthetic pesticides or fertilizers for our CSA (Community Support Agriculture), Farmers’ Market, and local restaurants. Kneehigh Farm prioritizes high quality produce, ethical practices, healthy soil and happy people. We are committed to creating connections between families, their food, and their farmers.
Community Supported Agriculture, or CSA, is a model of farming based on a mutually beneficial and direct relationship between consumer and farmer. Members, or ‘shareholders’, support the farm by purchasing their share upfront before the season begins. This allows the farmer to purchase seeds, supplies, and tools for the year without the stress of taking out loans or blindly investing capital up front. In turn, the farmers commit to supplying the consumers with a steady load of seasonal produce throughout a designated number of weeks.
Kneehigh Farm is based on the values of regenerative, rather than sustainable practices. As stewards of the land, we strive to nourish our community through nourishing the farm. Learning to work with the land, rather than against it teaches us humility, admiration, flexibility, and pride. By listening to the capacities and needs of the farm, we create a commitment to the food grown, and in turn, our community.
Each CSA box is different and unique, depending on the season. At Kneehigh Farm, we try and strike a balance between introducing new varieties, and providing staple crops, so our members don’t feel discouraged or overburdened by produce. Here’s what to expect throughout the year:
Spring: Arugula, Asian greens, baby lettuce, beets, broccoli, bunching onions/scallions, cabbage (green, red, savoy, napa), carrots, chard, cauliflower, dill, fennel, garlic scapes, kale, mustard greens, radishes, salad turnips, spinach, peas…
Summer: Basil, beets, snap beans, carrots, celery, chard, cherry tomatoes, cilantro, cucumbers, dill, eggplant, fennel, garlic, ground cherries, lettuce, leeks, peppers (hot and bell/frying), melons, okra, parsley, potatoes, shallots, summer squash, tomatillos, tomatoes
Fall: Arugula, lettuce, beets, broccoli, snap beans, cabbage, carrots, celeriac, chard, cilantro, collards, cauliflower, dill, eggplant, fennel, peppers, kale, leeks, mustard greens, parsley, parsnips, potatoes, pumpkins, radishes, rutabaga, salad turnips, shallot

Just Kidding Farm
At Just Kidding Nigerian Dwarf Goat Farm, we are dedicated to raising, breeding' and selling quality goats that have correct conformations and great personalities with the best milk production in a small package, to approved families. We look for families that will provide them with a safe environment, Veterinary & medical care, balanced diet for good nutrition. We have yearly blood work on each goat to ensure that they are healthy and free of disease. All of our kids will be dis-budded, have their CD&T vaccination & castrated if requested. And pre-spoiled! We preform the dis-buddings ourselves, and we also band boys for castrations. We are located in Central Pennsylvania and nestled in Buckwheat Valley. We are a small farm of eleven does and two bucks. I was lucky in 2010 to find two beautiful does for sale in NY. When they had kids we decided to keep two of the females. From there we decided that we wanted a buck of our own, and we found him in Felton, PA. I took in three more females when a very close friend needed help re-homing her goats so she could be with her husband again. And we keep growing as does our love of the breed. We have expanded and the new barn was completed this summer (2014). We now have water and electric to the barn. And we just finished insulating the milk room and nurseries so we will have some real heat this year for those beautiful kids at birth. A word of caution to anyone thinking about starting a herd, they are addictive; you will soon want one of every color. They are gentle, loving animals that enjoy time with their owners. They each have their own personalities, likes and dislikes. I am so glad that they were brought into our lives and that they are part of our family. We like drinking the goat’s milk and it is a much better option for me as I am lactose intolerant. We use the milk for drinking, and my husband’s favorite, making ice cream, soaps, cheese & cooking. We have met many people along the way that have helped us become the owners that we are today. Thank you for all of the hours you have spent helping us. And we look forward to helping as many people as we can in return. We are proud members of AGS (American Goat Society) & ADGA (American Dairy Goat Association).

Of the Woods, Hydrangea and Peony Farm
After visiting the Botanical Gardens in Fairbanks, Alaska and seeing the beautiful rows of Peonies they had blooming. We decided to clear our over grown field and turn it into a flower farm. The peony that was most stricking in Alaska was the Paula Fay. This is one of the varities that we have available. Hydrangeas are also a favorite flower so we decided to offer these as well. All of our plants are grown in our field.
Tag a Peony in Spring and return in Fall to pick up your division. A few potted peonies are available for Spring transplanting. Our Tree Peonies, Sahohime, Hanakisoe and Hoki are also potted and ready to plant.
PAEONIA, Peony herbaceous –Hardy perennial, east to grow, long lived. Full sun, drought tolerant, deer resistant, begins blooming mid May, Zone 3-7.
We have 36 different named peony varieties for the 2015 season. There are also a few unnamed varieties available. Resulting in approximately 400 plants. The blooming season starts mid May and continues for a few weeks. It's a beautiful sight to see.
Hydrangeas –Perennial shrub, Sun to Part shade, full morning sun and afternoon shade. Prefer moist, acidic well drained soil. Most varieties bloom on old wood. Zone 5-9. To encourage blue flowers maintain a ph 5.0-5.5 using aluminum sulfate to acquire this target, to encourage pink flowers maintain a ph 6.0-6.5 using lime. Care must be used when trying to adjust the normal ph of your garden. Too much of either additive could be hazardous to the plant. A safe approach would be to enjoy the color your garden produces.

Kloubec Koi Farm
Myron and Ellen Kloubec began their careers in aquaculture over thirty years ago, when they began a fish management business in Amana, Iowa.
The farm was originally dedicated to the production of game fish species. Some ten years later, Myron and Ellen learned about koi when their son Nick developed a passion for them. As Nick grew, so did the families commitment and fondness for koi. They devoted a portion of their fisheries business to the spawning and raising of koi. Gradually, the farm reduced its production of game fish species and devoted the majority of the farm acreage to the production of koi.
Nestled in the rolling hills of Eastern Iowa, Kloubec Koi Farm looks like a scene from Niigata, Japan. Over 55 mud ponds can be found on the 80 acre farm, terraced into the hills so that the melting snows add pristine water into the ponds—water that is essential to the development of koi. But good water is not the only attribute of the farm; excellent clay is vital to the development of koi, and here too, Kloubec Koi Farms benefits from an ideal location, rich in minerals and clay.

Parsons Tree Farm
The Parsons Tree Farm is a family owned and operated Christmas tree farm in Centre County. Located near State college at 1503 Dix Run Road, Julian PA 16844, the farm has been in the Parsons family since 1921. Bill Parsons, current owner, bought the farm from his father, Jesse Parsons, in 1968. That year, the first Christmas trees were planted on erodible land as a method to conserve soil. During the summer, Bill, his daughter Janet Parsons, sons Robert and Eddie and grandson Shawn prune the trees.
The farm is a "select and cut your own" Christmas tree farm. Families enjoy pursuing and cutting their own special tree. At the “old barn”, the trees are “shaken” to remove loose needles, baled and even drilled for center spike tree stands. While the tree is being prepared for trimming, the families can enjoy hot chocolate, and treats.
Trees can be selected early in the season and then cut and purchased later. Tags are available at the farm in early November. Handmade wreaths are also available for purchase.
Buy locally and reduce your carbon foot print. At Christmas time, only the trees that are sold are cut. Once a tree is cut, a new seedling tree is planted in its place the following spring . The trees reduce erosion, are bio-degradable, and are recyclable as mulch. This Christmas, stop and say hello to Bill Parsons, (Bill is 91 years old this Christmas) his daughter Janet, sons Robert, Eddie and grandson Shawn as they try to make your Christmas tradition of selecting a tree an enjoyable one.
