We use the following grading scale for our maple syrup:
Grade A: Golden Color with Delicate Taste (Fancy) - a very light color and an extremely delicate flavor. The best grade to use to make maple candy and cream.
Grade A: Amber Color with Rich Taste (Medium Amber)- the color is a couple of shades darker than fancy. It has a pleasant, clean delicate flavor. Preferred by most people as a table syrup. A good choice to make maple sugar.
Grade A: Dark Color with Robust Taste (Dark Amber)- is Slightly darker than medium amber. Has a faintly robust flavor. Good for baking, coating nuts and for people who prefer a stronger maple flavor.
Grade A: Very Dark Color with Strong Taste (Grade B)- has a very dark color and a very strong maple flavor. It can have a bit of a molasses taste. Preferred by some. Good for baking.

Then a tour doing a condo conversion of a 100 unit high rise in Dayton SMA. then came along doing Ohio’s first condominium, it became his next opportunity to sell himself out of a job.
So Bill then went on his own. became a realtor-builder and established his trade name Real Services Co in PA in the 80s, with the purpose of importing ultra high energy-efficient (R-2000) house packages...now commonly called 'green building' design systems; then the technology was only available via import, in cost-effective quality and quantity in a kit package from high tech groups like Eastern Canada's Viceroy Homes Ltd.
A tour with The Meyers Group, now Meyers Research, found Bill also attended Cal-Riverside extension NAHB courses and also their grad school to learn the fine points of real estate marketing analysis. After preselling and supervising the completion more the 45 new homes in both Southern California’s Inland Empire and later in Central PA, he then met Canada’s Nobord people and subsequently became the U.S. Sales Manager for still another major Ontario based company, the post and beam timberframe company while living in the Toronto area for Normerica Building Syst

Clover Creek Cheese Cellar, LLC
We are a family farm located on scenic Clover Creek in Central Pennsylvania. Our farm is 126 acres of pasture and woods. We milk 60-80 Milking Shorthorn, Jersey, Ayrshire, and cross-bred cattle, rotating them to fresh pasture at least after each milking. We milk in a New Zealand style swing parlor, and the whole family (Dad, Mom and 5 children) is involved in the operation. We plan on our cows calving in March and April and eating the majority of their ration as pasture. In the winter they are fed grass hay. We sell raw milk from the farm and grass-fed beef.
We built our own cheese plant in 2007 and now have our own farmstead artisan raw milk cheeses for sale. Our cheese is not another push button cheese. Each vat is filled slowly, using a stainless steel pipeline direct from the milking area as the cows are being milked. Cultures are then carefully added and the milk is gently stirred by hand, not beaten by stainless steel paddles. After the right amount of time, rennet is added following the age old tradition of making great farmstead cheese. After coagulation, the curds are quickly cut, allowed to rest and heal, and then gently stirred by hand. The curds are eventually packed into molds and pressed by hanging weights for the allotted time. Cheeses are then aged in one of our climate-controlled cellars, on locally grown wood shelving. Instead of suffocating them in plastic, they grow a natural rind that gives additional character and flavor to the cheese. At just the right time, we remove them, package them, and sell them to discriminating customers. Welcome to the taste and quality of true farmstead artisan cheese! Healthy Harvest Farm is owned and operated by Dave Sandy and Sara Eckert. Together we have over 15 years of experience growing vegetables for families in Central Pennsylvania. The Musser Family in Bellefonte is currently leasing us 15 acres next to the Musser Farm Market. All of our produce is marketed through our CSA program. We grow enough vegetables to feed 130 members in the Summer/Fall and 55 members in the Winter/Spring. Although we are not certified organic we follow sustainable farming practices including extensive crop rotations and never use synthetic pesticides or fertilizers. We care about the health of our environment and our members.

Our business name honors our farm's listings in local history books as "The Evergreen Farm". We do not sell evergreens, but hope to keep this property "Ever-Green". Our beautiful location has been in agriculture since the late 1700's and in the Burkholder family since 1924. Dan and Margi purchased the main farm homestead in 2002. Our motto, "Preserving History, Conserving the Land" reflects our commitment to bio-friendly practices, such as generating solar electricity, using geo-thermal heating and cooling, maintaining our creek frontage in the CREP program, and using as many organic practices as feasible. Pasteurized Mushroom Compost is a product that benefits many different aspects in a growing environment. Red Hill Farm CSA
Red Hill Farm is a ministry of The Sisters of St Francis of Philadelphia. We are a 120 member organic CSA serving Delaware, Chester and Philadelphia counties as well as the Wilmington, Delaware area. We grow a wide variety of organic vegetables, flowers, herbs, and berries. On farm pick up is once a week with u-pick crops available. Season begins early June, and runs through mid November.

USA Gypsum manufactures multiple high quality gypsum products for a variety of uses, such as gypsum for lawns, agricultural gypsum, and gypsum animal bedding.
Gypsum is a soluble source of the essential plant nutrients, calcium and sulfur, and can improve overall plant growth. Gypsum amendments can improve the physical properties of some soils (especially heavy clay soils). Gypsum promotes soil aggregation and help prevent dispersion of soil particles, reduce surface crust formation, promote seedling emergence, and increase water infiltration rates and movement through the soil profile. It can also reduce erosion losses of soils and nutrients and reduce concentrations of soluble phosphorus in surface water runoff.
Gypsum bedding additives include products designed for poultry litter, free stalls, stanchion barns and bedding packs. We also offer several grades of barn dry. A chemical reaction between gypsum and ammonia in urine ties up the ammonia in the form of ammonium sulfate. Odor is reduced and the environment in the building improved. Because Gypsum Bedding combined with manure is spread on croplands, it has additional value as a source of additional Nitrogen, Calcium and Sulfur. Most farmers purchase these products for their crops so the cost of Gypsum bedding is recovered.

Dillsburg Farmers' Market
Dillsburg Farmers' Market is a Saturday morning oasis for fresh produce, eggs, poultry, meat, milk, cheese, baked goods, prepared food and beverages, plants and more. Parsons Tree Farm
The Parsons Tree Farm is a family owned and operated Christmas tree farm in Centre County. Located near State college at 1503 Dix Run Road, Julian PA 16844, the farm has been in the Parsons family since 1921. Bill Parsons, who past away in February, bought the farm from his father, Jesse Parsons, in 1968. That year, the first Christmas trees were planted on erodible land as a method to conserve soil. During the summer, Janet Parsons and Eddie Parsons prune and care for the trees.
The farm is a "select and cut your own" Christmas tree farm. Families enjoy pursuing and cutting their own special tree. At the “old barn”, the trees are “shaken” to remove loose needles, baled and even drilled for center spike tree stands. While the tree is being prepared for trimming, the families can enjoy hot chocolate, and treats.
Trees can be selected early in the season and then cut and purchased later. Tags are available at the farm in early November. Handmade wreaths are also available for purchase.
Buy locally and reduce your carbon foot print. At Christmas time, only the trees that are sold are cut. Once a tree is cut, a new seedling tree is planted in its place the following spring . The trees reduce erosion, are bio-degradable, and are recyclable as mulch. Community Supported Agriculture, or CSA, is a model of farming based on a mutually beneficial and direct relationship between consumer and farmer. Members, or ‘shareholders’, support the farm by purchasing their share upfront before the season begins. This allows the farmer to purchase seeds, supplies, and tools for the year without the stress of taking out loans or blindly investing capital up front. In turn, the farmers commit to supplying the consumers with a steady load of seasonal produce throughout a designated number of weeks.
Kneehigh Farm is based on the values of regenerative, rather than sustainable practices. As stewards of the land, we strive to nourish our community through nourishing the farm. Learning to work with the land, rather than against it teaches us humility, admiration, flexibility, and pride. Each CSA box is different and unique, depending on the season. At Kneehigh Farm, we try and strike a balance between introducing new varieties, and providing staple crops, so our members don’t feel discouraged or overburdened by produce. Here’s what to expect throughout the year:

Indian Run Farm
We are about to enter our fifth season of operation in 2010 raising a variety of poultry. No herbicides or pesticides are used, nor is medicated feed. In season we have: Rhode Island Red Chicks; Heritage breed turkey poults of Red Bourbon, and Royal Palm; Khaki Campbell and Muscovy Ducklings; Toulouse Goslings; French Pearl Guinea Keets; and Cortunix quail chicks. Brown chicken eggs are available for sale as is fertile eggs for most of the breeds listed. In the fall, we have butchered young heritage breed turkeys and young geese, it is suggested you call in and reserve birds for Thanksgiving and Christmas. We are hoping to make available limited numbers of young emu and peafowl in 2011.
Should you need large numbers of any breed it would be worthwhile to call in advance and place an order. Normally our price for young birds is very competitive and since we breed in relative small numbers we sell out of hatches quickly in the spring. A discount is offered for pickup of birds on the hatch date. In addition, we add 50 cents per week for birds past one week old. We do not ship birds and all items are available for pick up at the farm. No sexing of young birds is done.
During the spring, starter flower and vegetable bedding plants will be on sale. In season extra produce from the farm will be placed on sale at the stand. Turkey, Goose, Duck, and Chicken feathers will be available in the breeds listed above for craft work. We have blown (single small hole) untreated turkey, goose, chicken, and quail eggs in limited quantities for sale for craft and art work.
